Tasty ugly food

Haha, I was so chuffed to share a recipe with you. Because I love having something quick and tasty to pull out of the freezer on weekdays when everyone is a minute from a meltdown, hungry as hell and the options are either pizza or pasta and you’re sick and tired of both. Doing a chunk of work beforehand so I can serve myself something easy later, over and over again, brings me disproportionate satisfaction. Can’t find one solid argument against it.

I found a lentil and potato recipe on a late-night phone trail no one recalls. Bookmarked it for weeks. Bought an ingredient here and there before finally committing to it one Sunday in August. Potato in soup is heaven to me. Same with soggy spinach in stews. Very visceral. Can’t explain.

The thing is, and the reason this post started with a laugh, I embarrassingly thought I had some really nice photos from the batch cooking and dinner setting. What I had was one macro photo from inside a pot and one photo from when I had it for lunch topped with tofu a few weeks later. That plate and plating reminds me mostly of the prison food in Paddington 2 pre-Paddington. My shit visuals won’t sell this dish, but the fact that it is so tasty, quick to make, protein-rich and budget-friendly hopefully will.

I followed Plant-based on a Budget’s recipe, doubled the recipe, used ground cumin as I couldn’t find cumin seeds anywhere and couldn’t be bothered.
